The last time I baked a carrot cake was for his birthday last year. I remembered it as laborious and extremely sweet, definitely not trying that recipe again. Searched the internet and decided to use the one from Allrecipes.
The result was extra-ordinary!! I had many rave reviews. My hubby said it was better than Cedele's and not overly sweet. Maybe he said that to please me (considering I am heavily pregnant now....). Either way, I am grateful for the compliment. Here's a pic of the cake. The fork in the foreground was my son eagerly waiting to dig-in.
My FIL and MIL enjoyed the cake too. A family friend also commented that its as good as Cedele's. Ha ha.. think I'm surrounded by very kind people who tries to please a heavily pregnant woman!
As for me.. well.. I did manage to polish off a single slice of the cake. Here's the recipe if you are keen to try.
1 1/4 cups vegetable oil
2 cups white sugar (I used 1 cup brown, 1 cup white)
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans (I used walnuts instead)
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.
Note : I recommend to line the cake pan with baking paper. I only greased my cake pan and the cake got stuck. When I tried to force it out of the pan, it broke into many pieces.Hope you and your family enjoyed it too!
